Mediterranean flavors come together in this simple and delicious shrimp and tomatoes recipe. This meal will please a crowd – so double the recipe if entertaining.
Shrimp and Tomatoes
- 4 large tomatoes, stems removed and cut into eighths
- 2 Tbsp. olive oil
- 1 Tbsp. minced garlic
- 1/2 tsp. sea or pink himalayan salt
- 1/2 tsp. black pepper
- 1-1/2 pounds large shrimp, peeled, deveinded, and tails removed
- 1 Tbsp. lemon juice
- 3/4 cup crumbled Feta cheese
- 1/4 cup basil, chopped
- 1 cup brown rice
Preheat oven to 450 degrees. Prepare a large glass or ceramic baking dish with non-stick spray. Place tomatoes in baking dish topping with olive oil, minced garlic, salt, and pepper. Place on the top rack of the oven and roast for 20 minutes. Meanwhile, prepare rice according to package instructions.
Remove baking dish from oven. Stir in shrimp, lemon juice, and Feta cheese. Return to oven to roast for additional 15 minutes, until shrimp are cooked through. Serve over rice and top with basil.
