Energy Bowl

Looking for a healthy snack, post-workout mini-meal, or a super simple lunch?  Look no further.  This incredibly simple but uber-healthy energy bowl offers protein-rich foods with a healthy serving of veggies and healthy fats.

Serves 2


  • 4 Tbsp. hummus
  • 2 hard boiled eggs sliced
  • 1/2 cucumber, rinsed and sliced
  • 1 avocado, peeled, pitted, and sliced
  • Pinch Italian seasoning


Divide all ingredients between two bowls, sprinkle with Italian seasoning and enjoy.

Family-friendly tips: smash avocado to make it easier for little kids to eat.  Consider adding whole-grain pita to dip in hummus.
