Peanut Butter Energy Balls

These no-bake Peanut Butter Energy Balls are perfect for a quick recovery snack or to pack in lunches.  By combining protein, whole grains, and seeds, this recipe is a fast and simple way to include many health-benefiting foods (even the kids will love).

Peanut Butter Energy Balls

Ingredients:

  • 1 cup peanut butter (can substitute other favorite nut butter)
  • 1 tbsp. coconut oil
  • 1 cup oats
  • 1 tbsp. real maple syrup
  • 1/3 cup chia seeds (or flax seeds work great too)
  • 1/3 cup mini chocolate chips

Instructions:

Combine peanut butter and coconut oil in a microwave-safe dish.  Heat in microwave for 45 seconds to melt coconut oil and soften peanut butter.  Add remaining ingredients and mix until well combined.  Refrigerate for 30-60 minutes to allow the mixture to become firm.  Roll about 2 tbsp. of the mixture into a ball.  Will make about 20-25 balls depending on size.

Kid-Friendly Tip: get the kids in the kitchen for this one.  Rolling the balls is a simple task that any age kid can do and the texture of this mixture gives a lot of tactile input.
