Squash and Sage Quinoa

If my favorite ingredients ever were to have a baby, this dish would be it!  Squash and Sage Quinoa with Goat Cheese tastes decadent but only requires a few ingredients.

In the fall, squash is one of my favorite ingredients to serve roasted or in pasta and soups.  It is simply delicious.  Sage is the perfect compliment to squash and their flavor together is wonderful!  Okay, enough…this dish is awesome so let’s get to it.

Squash and Sage Quinoa with Goat Cheese

Serves: 4

Ingredients:

  • 1 cup quinoa
  • 1 kabocha or butternut squash, peeled, seeds removed, and diced into 1 inch cubes
  • sage, 1 bunch or about 30 leaves, rinsed and removed from stems
  • 3 Tbsp olive oil
  • salt and pepper to taste
  • 4 oz package goat cheese

Instructions:

Cook quinoa according to package instructions.  In a large skillet, heat olive oil over medium heat.  Add the diced squash, sage leaves, salt, and pepper and cook stirring occasionally for about 15 minutes or until squash is tender (can be easily stuck with a fork).  Divide quinoa into dishes, top with squash and sage mixture, and a few crumbles of goat cheese.  Drizzle with olive oil and serve.
